SCA Coffee Brewing-Intermediate (2 Days) $1,100
This 2 day course is ideal for someone who has brewing experience and wants to explore how to improve brewed coffee quality. It builds on the concepts and skills introduced in the Foundation course, and provides more detailed knowledge and skills for using common devices for brewing by the cup, and brewing with commercial batch brewers.
The theory and activities explore topics including:
- Brewing Elements - How brew quality is impacted by changes to any part of your brewing recipe, filter type, or equipment.
- Brewing Processes and Phases - Understand the specific processes and phases that occur during the interaction of water and coffee.
- Sensory Analysis - Describing aroma, taste, and body, and identifying intensity differences in the strength, acidity, and bitterness of brewed coffee.
- Roast Level - How brewing processes and the sensory profile are impacted by roast level.
- Cold Brewing - How cold brewed coffee differs from "hot" brewed coffee.
- Water Chemistry - How water impacts brewed coffee, and how to avoid corrosion and limescale in your brewing equipment.
- Analysing Strength and Extraction - How to use a refractometer to consistently measure strength (solubles concentration) and calculate extraction (solubles yield).
- Diagnosis - Adjustments to consider for improving the sensory profile of any coffee.
Brewing equipment available for use during activities includes:
- Fetco CBS 2131 XTS batch brewers.
- Behmor Brazen batch brewers.
- Tone Touch 03.
- Manual brewers - Aeropress; V60; December Dripper; Kalita Wave; Ceado Hoop; French Press; Cold Bruer.
Students who successfully complete the practical exam during the course must then successfully complete an online exam after the course to receive the internationally recognised SCA Brewing Intermediate certification. SCA Brewing Intermediate certification earns credit towards the SCA Cafe Diploma.

Cancellations & Refunds
If the organiser cancels the class:
You are entitled to a full refund.
If you can't attend the class:
You’re welcome to send someone in your place.
OR
- A refund can be requested 14 days before class starts. An admin fee of AU$20.00 applies.
- A transfer can be requested 14 days before the class starts. Free of charge.
No changes will be allowed after these times.

Electronic Devices in the Classroom
Electronic devices (including mobile phones) should be switched off or silent to avoid distractions in the classroom.
However, your instructor may allow you to use a device for translation assistance where necessary.
